Freezing temperatures are on the way so it’s time to start clearing out the garden. Eggplant chips are crispy and salty and are a great homemade alternative to processed snacks.
Salt and Pepper
Slice Eggplant in to chip size – sprinkle with Olive Oil, Salt and Pepper – back at 450 for 10 Minutes, flip the eggplant and return to oven for another 10 minutes. Garnish with mint and enjoy!
